Our Story

My name is Shawn Jones & I started Kirby’s Barbecue because growing up I had the privilege of learning & eating; “Mostly eating” my papa Kirby’s world-famous BBQ. Growing up I heard stories of him competing and winning BBQ cookoff contests in Kansas “where we are originally from.” Papa Kirby moved to Spring, Texas later in life & I remember summers of fun in the pool and BBQ in the smoker. When I was younger, as I mentioned I mostly ate the BBQ but as I got older, I moved from the pool to the BBQ pit so I could start learning how to make it myself. It didn’t take long for me to fall in love with making BBQ. My Grandpa passed away in 2016, but his legacy will live on through the foods and flavors that he taught me to make. I hope you enjoy them as much as I enjoy making them. Below is a picture of him feeding baby me a pork rib.

The Pitmaster

My name is Shawn Jones I am the owner, operator, pitmaster, baker, dishwasher, and much more here at Kirby's BBQ. I managed restaurants from 2014-2020 before changing industries for 4 years but then started to miss the restaurant life. This time however I was going to open my own rather than work for someone else. Nothing wrong with working for someone else's restaurant. In fact, I would not have the knowledge or skillset to open my own without countless mentors from my past endeavors. So, to those mentors thank you & to my guests prepare to enjoy BBQ with a mix of my grandfather's tips & tricks partnered with my culinary experience.

    Meet Bevo he was my first offset smoker. Despite learning about smoking meat from my grandpa I always used gas grills until Bevo & I can tell you the difference is night and day.

    Days prior to my first pop up I invested in this beast. I figured If the beginning of the weekend was successful, I would need alot more space.
